Pumpkin Cookies

Pumpkin Cookies





Makes: 15 cookies


Cooking and Preparation Time: 40 minutes
















Dry Ingredients:


  • 2 cups of wholemeal flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon bicarb soda

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 cup brown sugar

    Wet Ingredients:

  • 1/2 pureed pumpkin

  • 1 teaspoon vanilla extract

  • 1 egg

  • 50g melted butter

  • 2 tablespoons raw sugar

  • 1/4 cup sunflower or pumpkin kernels







  • Make one cup of pumpkin puree by peeling 300g of pumpkins. Thinly slice and steam for 10 minutes. Puree the

    pumpkins in a food processor or mash with a fork.

  • Preheat the oven to 180 degrees.

  • Using a seperate bowl combine the pumpkin puree with the vanilla, the egg and the melted butter.

  • Mix the wet ingredients with the dry ingredients to form a thick dough (don't over mix the ingredients).

  • Grease the baking trays or cover with baking paper and drop heaped tablespoons of the mixture onto the trays.

    Leave room for spreading and use a wet fork to flatten the mix.

  • Use the raw sugar or sunflower seeds to sprinkle on top of mixture.

  • Bake at 180 degrees for 20 minutes until golden brown
