Poached Pears in Cranberry Juice


Serves: 4


Preparation and Cooking Time: 1 hour




  • 6 pears peeled with the core removed but the stalks left on
  • 2 cups of cranberry juice
  • 2 cups of water
  • 1 cinnamon stick
  • 3 or 4 whole cloves
  • 1 whole star anise
  • Peel of one orange




  • Slice the bottom of each pear to make a base so it stands up and scoop out the core using a melon baller.
  • Place the cranberry juice, water, spices and orange peel into a thick bottomed pan, bring to boil and add the pears. Cover with a lid and simmer for 45 minutes, turning occasionally so they colour evenly.
  • Remove from the heat and allow to cool in the cooking liquor. Once cooled, remove the pears from the juice and bring the liquid back to the boil and simmer until its reduced by 2/3 - this makes a wonderful syrup for the pears.
  • To serve, place the whole pear on a plate, pour over a little of the syrup and place a little natural yoghurt, cream or ice-cream on the side.
