Pasta with Roast Pumpkin and Feta




Serves: 4


Cooking and Preparation Time: 45 minutes












  • 1 kg pumpkin peeled and cut in 2cm chunks

  • 1 red onion, diced

  • 4 cloves garlic, diced

  • 1 tablespoon freshly chopped rosemary

  • 1/4 cup olive oil

  • 500g packet wholemeal penne or spiral pasta

  • 250g low fat feta

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons freshly chopped parsley

  • Juice of 1/2 a lemon














  • Combine the diced pumpkin, onion, garlic, rosemary and oil in a roasting tray.

  • Season with salt and pepper and roast for 30-40 minutes in a 20 degrees oven or until the pumpkin is soft and starting to caramalise.

  • Cook the pasta as per packet instructions.

  • Toss the roasted vegetables with the diced feta, cooked pasta, grated Parmesan, parsley and lemon juice.
