Mexican Sandwich

  • 2 cups of cooked chicken
  • 2 tablespoons of light sour cream
  • 1 cup of button mushrooms, finely chopped
  • 300g (10oz) mild chunky tomato salsa
  • 4 tortillas
  • 60 g (2oz) cheddar cheese, grated




  • Preheat the oven to 200 degrees (400F), and greese a shallow ovenproof dish

  • Combine the chicken, sour cream, the mushrooms and half the salsa

  • Divide the mixture between the 4 tortillas and roll up to enclose the filling

  • Place the tortilla parcels seam-side down in the ovenproof dish

  • Spoon the remaining salsa over the tortillas, and finally add the grated cheese. Bake for 15-20 minutes or until the cheese turns golden brown
