Little Fish Snacks

Ingredients:

 

  • 500g (1lb) of white boneless fish, cut the fish into 10 3cm cubes
  • 1/2 cup of plain flour
  • 2 eggs, beaten with a little milk
  • 1 cup of fine dry breadcrumbs
  • 1 teaspoon of lemon pepper seasoning
  • 3/4 cup olive oil
  • lemon wedges to serve

 

 

Instructions:

 

  • Place the fish cubes into a large ziplock plastic bag with the flour. Gently shake to coat each of the fish cubes

  • Dip the fish cubes into the egg mixture

  • Then dip the fish cubes into the combined breadcrumbs and lemon seasoning pepper

  • Fry crumbed fish cubes in olive oil on medium heat for 3-5 minutes until golden brown. Make sure you turn each fish cube a couple of times and serve with lemon wedges
