Crispy Zucchini Slices

  • 3 large zucchinis (courgette)
  • 1 cup of plain flour
  • 2 eggs, beaten with 1/4 cup milk
  • 2 cups fine dry breadcrumbs
  • 50g (1.8oz) Parmesan cheese, grated
  • 1 teaspoon dried thyme leaves
  • freshly ground black pepper to taste
  • 1/2 cup of olive oil
  • sweet chilli sauce and light sour cream to serve




  • Slice the zucchini into thick slices on the diagonal
  • Toss the zucchini slices into the flour
  • Coat with the egg mixture
  • Lastly, coat well with the combined breadcrumbs, Parmesan cheese, thyme leaves and ground black pepper
  • Fry zucchini in olive oil over medium heat until golden on each side. Serve with the sweet chilli sauce and light sour cream.
