Cajun-Style Steak Sandwich

Preparation and Cooking Time: 10 minutes

Ingredients:

 

  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 8 (800g) beef minute steaks
  • 1 large brown onion (200g), sliced thinly
  • 1/2 small red capsicum (75g), sliced thinly
  • 1/2 small green capsicum (75g), sliced thinly
  • 1/2 small yellow capsicum (75g), sliced thinly
  • 1/2 cup (125ml) water
  • 8 * 2cm-thick sliced bread

 

Instructions:

 

  • Rub combined seasoning and half of the olive over beef.
  • Heat remaining oil in large frying pan; cook onion, capsicum strips and water, covered, until capsicum is soft, stirred occasionally. Remove from pan, cover to keep warm.
  • Cook beef, in batches, in same pan, until browned both sides and cooked as desired.
  • Whilst the beef is cooking, toast the bread. Top four slices of the toasted bread with the beef and capsicum mixture. With the reamining four slices of toasted bread, place onto to complete your sandwich.
