Beetroot and Cheese Turkish Fingers

 

Serves: 4

 

Cooking and Preparation Time: 25 minutes

 

Ingredients:

 

 

  • 1 loaf of turkish bread
  • 1 medium raw beetroot peeled
  • 1/2 red capsicum, finely diced
  • 1 clove crushed garlic
  • 200g grated light cheese
  • 2 tablespoons sweet chilli sauce
  • 1/2 cup light sour cream
  • 2 tablespoons freshly chopped coriander or basil
  • 1 teaspoon vegetable stock powder

 

 

 

Instructions:

 

  • Grate the beetroot
  • Carefully combine the remaining ingredients with the beetroot
  • Slice the turkish bread into 2 cm fingers and press plenty of the topping on so it sits snugly
  • Place onto a greased oven tray and cook for 15-20 minutes at 180 degrees.
